Black rice vinegar - Rice vinegar

Varvello, who has always been attentive to contamination in the culinary field, has created two rice vinegars for you, obtained according to the millenary recipes of the oriental world (from which this vinegar derives) but using excellent products from the Italian territory. This is how rice vinegars are born, obtained from 100% Italian rice and whole black rice vinegar, a blend of Piedmontese whole black rice (Vercelli) selected for color, perfumes and ideal organoleptic characteristics, which give it the particular dark color . Tradition traces the origins of black rice to China, where in past centuries it represented a rare and precious rice that farmers cultivated only
for the emperor. It was a noble and exclusive food compared to the common rice with light colored grains. For this reason, black rice is sometimes called the emperor’s rice.
Almost totally free of calories, rice vinegar boasts very interesting properties that make it an excellent substitute for both the classic wine vinegar and salt, and containing B vitamins and various mineral salts, it is also a powerful energizer capable of support the body in periods of excessive fatigue.

BIO Apples - PIEDMONT Apples - Apples from Trentino

Apple cider vinegar is useful both in cooking and for health, thanks to the many beneficial substances (mineral salts, enzymes, fruit acids and vitamins) of which it is rich. But the properties and benefits are so many that it is not only the palate to thank; several studies confirm that apple cider vinegar makes you lose weight if included in a healthy and balanced diet and is very useful for the well-being of hair and face. In short, an authentic elixir for the body and not just for fantastic recipes in the kitchen. Varvello offers it in three fantastic variations: apple vinegar from Trentino, obtained only with apples from the valleys of Südtirol, apple vinegar from Piedmont, with apples from this area, and organic
apple vinegar, obtained from organically certified and 100% Italian apples. The yellowish color and the acidulous flavor are the characteristics of this vinegar, which derive from the fermentation process of apple peels. Barbera - Cabernet Sauvignon - Chianti

Barbera d’Alba wine vinegar, a wine of Piedmont origin between Asti and Alessandria, dear to the Varvello family, comes from the fermentation of Piedmont Barbera and subsequently aged in fine barrels. It’s a vine with a very long history: The first historical data relating to the cultivation of this vine dates back to 1259, in the Casale Monferrato area, but only in 1600 was it transplanted to the lands of Alba.
Surprise your guests by using it for preparation a traditional Piedmont plate: “Bagna cauda”, to give to preparation a spicy hint to be discovered.

The name Cabernet Sauvignon comes from the spontaneous cross (in French Sauvignon means wild) between two grapes from the French area of Bordeaux, Cabernet franc (black grape) and Sauvignon blanc (white grape).
After a slow fermentation it barrel aged, creating the Cabernet Sauvignon vinegar, a vinegar with a particular intense red color with blue shades, and a refined hint of wild berries that recall its wild nature.
Excellent in combination with Extra Virgin Olive Oil, to flavor each preparation.

This is a vinegar born from one of the most famous wines of the Tuscany region, and known all over the world. Obtained from the fermentation of Sangiovese grapes (which age for 11 long months) from the Tuscan hills of Chianti, in the area between Arezzo, Florence and Siena, and from the subsequent and further aging in barrels, which gives it a rather important body and structure.
Excellent in combination with Extra Virgin Olive Oil, strictly Tuscan, for the preparation of an excellent pinzimonio.

Moscato

Origins of these grapes, from which Varvello derives this vinegar, date back to Mediterranean Middle Eastern dock. The vector of its diffusion in the southern Italian regions were the Greek colonists, who brought with them the seeds or shoots to be able to cultivate it in the colonies of Magna Graecia. From Moscato Bianco vine we obtain deep straw yellow wines, fresh and with an intense flavor, but they also lend themselves well to sparkling wine: the result is a fresh vinegar that is appetizing on the palate.
It’s ideal for use in the preparation of an excellent Catalan of clams or crustaceans, thanks to its fresh scent of musk, in combination with a good Extra Virgin Olive Oil.
