The result of the aging experience of Varvello with the long and processed preparation of the Balsamic Vinegar of Modena PGI is a wise mixture between the vinegar and the cooked must produced with selected grapes (the favourite by Varvello) of the Sangiovese and Lambrusco grapevine varieties. This vinegar, which is aged in barriques and oak barrels, reaffirms the highest standards of the traditional Varvello quality.
Dark brown colour with red reflections, high density, sweet and sour taste (with notes of wood, cooked fruits, plum, vanilla and cherry), balanced and pleasant. It is excellent on red meat (even raw), roast meats, risottos, Grana Padano Cheese, on ice cream and berries.
