Traditional Balsamic Vinegar of Modena D.O.P. is a unique product in the panorama of vinegar-based seasoning. Unlike Vinegar, which comes from an alcoholic liquid, it is obtained directly from grapes juce.
The must obtained from traditional grapes cultivated for centuries in the area of ​​origin, cooked in an open jar and over direct fire, is placed in precious wooden barrels where it acetifies with extremely complex natural fermentation and oxidative processes.
In the quiet atmosphere of wineries, with the particular decanting technique and the many years of ageing and refinement, the wide range of products from microbial and enzymatic transformations reaches a surprising balance of aroma and flavour.
It comes in two types, differentiated on the basis of respective ageing periods: from twelve years up to 25 and beyond for the product labelled as "Extra Old".
It can be used on fresh and boiled vegetables, boiled meat, to make sauces and finally meat and fish dishes, where the best chefs continue to try to discover new culinary achievements.
